It’s Thankful Thursday!
I’m sure most folks have heard the phrase, “every time you eat or drink, you either fuel disease, or fight it.”
I get it. It can be difficult to find delicious, nutritious meals that your whole family will love, but we really do need to make more of a conscious effort toward what we are putting in our bodies.
In today’s fast paced society, convenience is key. Finding wholesome foods that fuel our bodies, but yet can be made in a flash, is paramount.
Check out this fun family favorite recipe of ours, which takes only a few moments to prepare, it tastes like pizza, and it can stand alone as a main dish, or can be used as an accompaniment to a meal.
Ingredients:
* 3-4 Medium Yellow Squash
* 3-4 Medium Zucchini
* 2-3 Tablespoons Nutritional Yeast (or if not vegan, 4 oz. Mozzarella Cheese)
* Pizza Seasonings: Oregano, Basil, Garlic Powder, Thyme, Fennel, Crushed Red Pepper, Parsley, Pepper, Salt, etc.
* 1 Tablespoon Water
Instructions:
Thoroughly wash, dry, and slice the squash and zucchini into thin circles.
In an oven-safe baking dish (preferably with a lid), layer the yellow squash, zucchini, nutritional yeast (or cheese) and desired pizza seasonings.
Repeat layers until all of the squash and zucchini have been used up and top with a layer of seasonings.
Once layered, sprinkle the tablespoon of water on the top and cover with a lid.
Bake in a 375 degree oven for 15-20 minutes, or until vegetables are crisp tender.
Serve immediately. Enjoy!
