Vegan Burgers

Another Meatless Monday is upon us and just because it's a holiday, does not mean you have to stray from your healthy eating habits.


You can even indulge in Burgers!


These clean creations only took a few moments to throw together and your guests will not even know they do not contain meat.

Ingredients:

1 cup quinoa, cooked 1 can of beans (pinto, black, kidney, whatever you have in your pantry), drained & rinsed 1 small can of tomato paste 1 tablespoon dried oregano 1 teaspoon garlic powder Black pepper, to taste Fresh basil

Preheat oven to 400˚F.

In a large bowl add the quinoa, beans, tomato paste, and seasonings. Using a hand-masher or fork, mash the ingredients until thoroughly mixed together.

Take a quarter of quinoa-bean mixture and shape it into a patty using your hands. Repeat with the remaining mixture to create 4 patties.

Place the patties on a parchment paper-lined baking sheet.


Bake for 12-15 minutes.


Depending upon what type of beans you use, you may need to bake the burgers for a little longer (I found pinto beans are a little squishy, so you may want to bake them longer to get a regular ‘burger consistency’).


Place the patties on large lettuce leaves and top with fresh basil (absolute must - so yummy!), pickles, mustard, etc.
