Sip of Sunshine!

We woke up today with birds chirping, the first glimpse of sunlight peeking over the horizon, and the fragrant smell of spring in the air.


There sure is a lot of craziness going on in the world at this moment. Being able to take in a full breath of the beautiful spring scents is more than some folks are able to accomplish right now.


For this, we are so grateful today and every morning. We wanted to capture the beauty of spring and fuel our bodies for another busy day.


This little sip of sunshine is exactly what we needed this morning.


To make your own, you will need the following ingredients:


* 1 Cup of Fresh Red Raspberries

* 1 Medium Sized Banana

* 1/2 Cup Coconut Meat

* 1 Cup of Almond Milk (or other dairy-free milk)

* 10 Ice Cubes


Blend all together in a high-speed blender.


Pour immediately into serving cups and garnish with fresh red raspberries, if desired.

@Lorrin Bowser - We didn't really taste the coconut in the smoothie. You can certainly use less coconut than the recipe calls for, or omit it all together. We would suggest using a tablespoon of Almond Butter instead, as a thickening agent. Or perhaps use less Almond Milk. We would love to hear your thoughts if you try it out! :)

I'm not a big fan of coconut. Is there a substitution? Or do you not taste the coconut?
