With all of the crazy weather that we have experienced this summer, we eagerly await the arrival of Autumn as quickly as possible!
We decided to invite Fall into our home today and we made vegan Pumpkin Pancakes for lunch!!
Not only were these easy to put together, their ingredients were super simple and our family devoured them pronto!
Simply mix together the following:
INGREDIENTS:
1 1/4 cups flour (I just made oat flour in my blender)
2 teaspoons baking powder
3/4 teaspoon pumpkin pie spice or cinnamon
Pinch of salt
1/2 cup organic 100% pumpkin puree
1 1/4 cups unsweetened almond milk
2 teaspoons pure maple syrup
1 teaspoon vanilla extract
Mix all of the dry ingredients together very well in one small mixing bowl; set aside.
Mix all of the wet ingredients together well in another small bowl.
Combine the ingredients of the two bowls together and mix just until batter forms (do not over-mix).
Season warm griddle or skillet with a small amount of grease (coconut oil, vegan butter, etc.).
Drop a small amount of batter in small circular forms on hot griddle. Let circles cook about 2 minutes, edges will bubble slightly and start to look leathery. Then, flip and cook for another 2 minutes. Repeat until all of the batter is gone.
Serve warm with pure maple syrup, top with fruit, or nut slices.
