Well, isn't that peachy?
With peaches in season right now, our family is obsessed with everything peach! It doesn't get much better than the succulent juice of a peach rolling down your chin on a warm summer day.
With school in full swing however, there is not a lot of downtime for us to be relaxing and leisurely eating peaches poolside. That's where these fast overnight 'Peach Pie' oats save the day!
Simply mix together:
1/2 Cup Oats
1/2 Cup Oat Milk / Almond Milk (any dairy-free milk of your choice)
1/2 Cup Plain Yogurt (Almond Yogurt or Greek Yogurt, if not Vegan)
1 Tablespoon Chia Seeds (or Flax Seed, or both combined together)
1 Tsp. Local, Organic Honey
1/2 Tsp. Pure Vanilla
1/2 Tsp. Ground Cinnamon
1/4 Tsp. Ground Nutmeg
Once this mixture is blended well, cut up 1/2 fresh peach and place the pieces on the bottom of a glass jar. Layer your Oat mixture on top of the peach pieces until 3/4 of the jar is full. Top with remaining sliced peaches.
Place this in the refrigerator overnight (or at least 3+ hours) for all of the flavors to blend together.
In the morning, enjoy cold, straight from the jar, or you may also heat this up in the microwave for 1 minute, if you prefer it warm.
